About Us

Purslane is a small, independent restaurant in the heart of Cheltenham which specialises in the freshest, sustainably-caught seafood from British waters combined with the best local produce the Cotswolds has to offer. We opened in the Summer of 2012 and our menu is seafood-led, though carnivores and vegetarians will always find delicious options to choose from. The fish we use is sourced from small, inshore day-boat fishermen who use handlines and nets off the coast of Cornwall. They don’t damage the seabed by trawling and they land their fish on the same day it’s caught so it can be fresh on your plate the very next day.

Seasonal vegetables from the Vale of Evesham, an abundance of local cheeses and rare breed meats from the Cotswold Hills are just a few of the fantastic foods we are lucky to be able to source locally and include on the menu. Chef, Gareth Fulford leads a small team using modern techniques such as sous vide cooking to bring out the purest flavours while delivering simple dishes to a high standard. Restaurant Manager, Stephanie Ronssin and her team pair these beautiful meals with stunning wines and a relaxed, friendly service.

Whether you’re popping in for our Light Meals menu at lunch or before a night at the theatre, or dining A La Carte after a great day at Cheltenham Races, Purslane offers an intimate and welcoming atmosphere that you’ll want to revisit time and time again.

"Originally from Paris, I developed a passion for food and an ambition to open my own restaurant at an early age. In order to achieve my dream I trained in one of the best hospitality and catering schools in Paris and shortly after passing my exams I moved to England thinking I would only stay for a year – how wrong was I!

The Cotswolds are too beautiful to leave. I had the chance to work in some of the finest establishments in the region, included Michelin-starred and AA-rosetted hotels and restaurants.

This gave me much more knowledge and experience and I’m now so proud to have opened Purslane. I’d love to welcome you here.”

"I come from a family of butchers where, as a child, fish was seen as a rare luxury at the dinner table. I love the simplicity of cooking fish and creating fantastic dishes from the humblest of ingredients. After spending five years working at prestigious events cooking for royalty and various A-list celebrities, I settled in the Cotswolds to work at a top-quality gastro pub before realising my dream of opening Purslane restaurant.

I love sourcing fantastic seasonal produce from smallholders in Cheltenham and the surrounding area, finding out exactly where all of our ingredients come from

and how they are grown, reared or caught. Over the years I’ve learned that food can be luxurious yet simple at the same time"
